Hemp Cookie

Here’s a simple and delicious recipe for Hemp Cookies:

Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup hemp seeds
  • 1/2 cup rolled oats
  • 1/2 cup dark chocolate chips (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. Cream Butter and Sugars: In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Add Hemp Seeds and Oats: Stir in the hemp seeds and rolled oats. If using, fold in the dark chocolate chips.
  7. Shape Cookies: Scoop tablespoons of dough and place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten the dough slightly with the back of a spoon.
  8. Bake: Bake for 10-12 minutes, or until the edges are golden brown. The centers may still look slightly soft.
  9. Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Tips:

  • Add-ins: Feel free to add other ingredients like dried cranberries, chopped nuts, or shredded coconut for extra flavor and texture.
  • Storage: Store the cookies in an airtight container at room temperature for up to a week, or freeze for longer storage.
  • Health Boost: For a healthier version, you can replace half of the all-purpose flour with whole wheat flour and use coconut sugar instead of granulated sugar.
